Avocado chicken salad
Not sure if this is ok until 2nd week of P3 but this chicken salad sounds awesome:
2-3 boneless skinless chicken breasts (cooked and shredded) - or you can get a rotisserie chicken and cut into bite size pieces
1 avocado cut up (I love avocado so I would use 2)
1/4 onion chopped
juice from 1/2 lime
2-3 T cilantro
salt and pepper to taste
Mix and enjoy!!
I'd probably use some hard boiled egg too

If you read this can you tell me when in P3 we could eat this? It doesn't have mayo or anything so hopefully after the 3 days of protein load.
