Chicken soup
Hubby said "Hey, you could make this when we're NOT dieting!"
Thinly sliced chicken portion seasoned to taste (salt, pepper, garlic, onion powder, etc.)
1/2 onion portion very finely diced
1/2 onion portion chopped in large chunks
In small saucepan panfry chicken to get good caramelization on it, then add finely diced onion and enough water to cover. Bring to boil, then reduce heat and simmer until onions are very translucent and tender (about a half hour). Remove from heat and puree broth and onions (I used my immersion/stick blender, but you could remove the chicken and put it in a traditional blender or food processor). Add large chopped onion and return everything to the burner for another 10-15 minutes, or until the large chunks of onion are tender/crisp. Taste broth and add further seasonings as desired.
It was quite tasty and very satisfying.

I am so envious of people who can make P2 foods tasty and appealing. I "borrowed" many recipes from the more creative ones in our group. thanks for sharing any and all ideas
