    Tips for frying?

I was wondering if folks had any tips for how to fry or grill meat appetizingly without oil?
The meat itself is flavorful and moist enough, but I really don't care for the dried out almost jerky like texture of the outer part of the meat.

I just cook with water enough to make a broth and pour it over my chicken.

I also make chicken broth from my 100 GM chicken pieces, water, celery leaves, salt, pepper, garlic, thyme. I use that to cook my veggies in or to make soup with the chicken and chopped celery or to cook the meat. It is not the most flavorful, like processed broth, but it is better than water in my opinion.
