This isn't a sweet bread, it could be used for sandwiches. It's pretty good toasted and sometimes I cut up a couple of slices and put a fried egg on top for breakfast.


Paleo Bread

1 cups blanched almond flour
2 tablespoons coconut flour
cup golden flaxseed meal
teaspoon celtic sea salt
1 teaspoons baking soda
5 eggs
cup coconut oil
1 tablespoon sweetener (I used Truvia)
1 tablespoon apple cider vinegar

1. Place almond flour, coconut flour, flax, salt and baking soda in a food processor
2. Pulse ingredients together
3. Pulse in eggs, oil, honey and vinegar
4. Pour batter into a greased Loaf Pan (the size of your pan depends on how tall you want your bread to be)
5. Bake at 350 for 30 minutes
6. Cool and serve
