    Avocado Egg Salad

    Linda, I just found this recipe and wanted to know if this would work for P3 Week 2?


    Avocado Egg Salad
    Servings: 6 • Size: 1/2 cup

    Ingredients:

    4 large hard-boiled eggs, chopped
    4 hard boiled egg whites, chopped (discard the rest)
    1 medium hass avocado, cut into 1/2-inch pieces
    1 tbsp Mayonnaise
    1 tbsp plain Greek yogurt
    1/2 tablespoon finely chopped chives
    2 tsp. red wine vinegar
    1/2 tsp Kosher salt
    pinch freshly ground pepper

    Directions:

    Combine the egg yolks with the avocado, mayo, yogurt, chives, vinegar, salt and pepper. Mash with a fork. Combine with egg whites and adjust salt as needed.

    All except the wine vinegar is fine. I believe it has sugar in it. Check the label. Also, cut down on the egg yolks. Too much fat otherwise.

    I think I'll try this with ACV instead and maybe just one egg yolk and the rest whites?

    I will do that! I had peanut butter yesterday and today - I had forgotten how that tastes - heavenly, of course!

    Going to try cheese today - it's amazing how excited we get over simple things like cheese and peanut butter! I have gotten into sort of a "routine" in Phase 3 now that seems to be helping me stay within my target weight. I eat most of my calories during the day and I find that when I get home from work I don't have any appetite. Last night I ate a few bites of salmon and I was done. Eating the majority of your food during the day seems to help stabilize your weight, at least in my case it has.

    That is good advice. You are correct eat most your calories before dinner.

    . Hi how was the avocado egg salad.. And what was your serving for a meal or snack.
