View Full Version : Spaghetti and Steak Sauce!

1 large Spaghetti Squash:
Preheat oven to 450 degrees
Cut the squash in half, lightly oil with EVOO, add salt and pepper to taste and place cut side down on a cookie sheet with foil
cook for 35 - 45 minutes. (Until soft)
Remove from oven and let sit until cool enough to handle.

Sauce: (All sugar free of course)
Tomato Sauce
Diced tomatoes
Saute'd Onions, fresh garlic, red bell peppers and baby portabelo mushrooms in EVOO
Oregano, Basil, Rosemary, Sage, parsley, crushed red pepper,sea salt, black pepper

Saute the veggies that are listed with saute'd list until nicely caramelized
Pour in diced tomatoes, simmer a bit
pour in tomato sauce and all spices, simmer for about 20 minutes.
Grill steak portions, dice and add to sauce.
Spoon out Spaghetti squash into sauce pan and pour simmered sauce out of the saute' pan over the spaghetti squash. Simmer just a little more.
We had ours with a side of Grapefruit.
Enough left overs for 2 more meals at least. (Or lunches)

If your weight remains stable then you will be fine. Keep in mind that women tend to be more sensitive on the scale to new things than men.

I just bought a spaghetti squash about an hour ago! I'm going to wait a bit longer for it myself though (only on D2 of P3)

Perfect Jacque. Only have a little the first time you eat it. If you gain, wait another week to eat it.

Crystal is doing fine, wavering less than a pound from LDW... so I think it is all good in our program.
