View Full Version : Nutty Protein Pancakes

We like "hearty" pancakes, and we like to make a bunch so we can have them in the refrigerator for snacks (just a side note, a PB&J sandwich made with pancakes is SO yummy! LOL).
So I have come up with this recipe. It does have some "real" flour in it, so maybe it isn't great for P3, but still pretty high protein/lower carb, nutrient rich and tasty.

5 large eggs
1 cup almond flour
1 cup AP flour
1/2 cup whey protein
1/2 cup finely chopped pecans (I pulsed whole nuts in the food processor until they were about the size of sesame seeds)
1/4 cup ground flax meal
3 tsp Stevia Baking Blend (the sweetness equivalent of 2 tablespoons of sugar)
3 tsp baking powder
2 tsp vanilla extract
1 tsp salt
about 1 1/4 cup soy milk or whole milk (enough to make batter a thick but pour-able consistency.)
3-4 tsp butter for frying

Lightly eat eggs in a large bowl with fork or whisk. Add vanilla, salt and sweetener and 1/2 cup soy milk. Mix in almond flour, whey powder, chopped pecans and flax meal. Batter will be thick and pasty.
Mix AP flour and baking powder together in small bowl, then add to batter in bowl. Once flour mixture is thoroughly mixed in (kinda pasty and dough-like at this point).
Add enough more milk to bring batter to thick but pour-able consistency.

Makes about 20 4" pancakes.

The AP Flour is what makes this Phase 4.
