Once you have safely incorporated cheese into your P3 diet you can try these yumminesses!
2 oz cream cheese
2 eggs
10 drops liquid stevia
1/4 teaspoon cinnamon (optional)
Blend all ingredients until smooth (I used my magic bullet, but a regular blender would work), then allow the "batter" to rest for a couple minutes so that the froth dies down. Heat skillet or griddle with butter to medium heat. Pour 4" circles and cook until a gently lifted edge shows it golden brown underneath. Then VERY gently flip them over and cook about 1 more minute or until bottom is also golden brown.
Serve with stevia sweetened whipped cream, S-F candied pecans* and berries.
Later in P3, I added 1/4 cup white bean flour and 2 tsp baking powder and these then puff up just like "real" pancakes. - oh so good!

*SF candied pecans: 2 ½ cups pecans, 1 egg white, 3 TBSP stevia powder (approx equivalent to 1/2 cup sugar), 1 teaspoon cinnamon, 1/8 teaspoon salt. Whisk egg white until nice and frothy, stir in stevia and cinnamon. Then toss all nuts until evenly coated. Spread evenly (one nut layer thick) on a baking sheet and bake for about 30 minutes, turning them every 10 minutes or so.
