View Full Version : P3 Crepe Pancake and SF Candied Pecan Dessert

Once you have safely incorporated cheese into your P3 diet you can try these yumminesses!

2 oz cream cheese
2 eggs
10 drops liquid stevia
1/4 teaspoon cinnamon (optional)

Blend all ingredients until smooth (I used my magic bullet, but a regular blender would work), then allow the "batter" to rest for a couple minutes so that the froth dies down. Heat skillet or griddle with butter to medium heat. Pour 4" circles and cook until a gently lifted edge shows it golden brown underneath. Then VERY gently flip them over and cook about 1 more minute or until bottom is also golden brown.

Serve with stevia sweetened whipped cream, S-F candied pecans* and berries.

Later in P3, I added 1/4 cup white bean flour and 2 tsp baking powder and these then puff up just like "real" pancakes. - oh so good!

*SF candied pecans: 2 cups pecans, 1 egg white, 3 TBSP stevia powder (approx equivalent to 1/2 cup sugar), 1 teaspoon cinnamon, 1/8 teaspoon salt. Whisk egg white until nice and frothy, stir in stevia and cinnamon. Then toss all nuts until evenly coated. Spread evenly (one nut layer thick) on a baking sheet and bake for about 30 minutes, turning them every 10 minutes or so.

I did a double batch and made one for me and one for Hubby, who were both in P3 together. He ate all of his, I ate about half of mine.

I made the candied pecans tonight, and not bad!! I think I will reduce the cooking time next time around, because I wound up with a slight "burnt" flavor... But not bad!! Might have to try the pancakes tomorrow morning...

Wouldn't white bean flour make this a P4 recipe? Has anyone tried it with almond flour? Dairy and eggs give me issues but this looks good enough to chance it ;)

I make them with almond flour now all the time. 4 eggs, 4 oz cream cheese, 1/2 cup almond flour, tsp baking powder mixed in with the flour before incorporating into the egg/cheese smoothie.
You definitely want to wait on a recipe until you can have all of the ingredients. I wrote this recipe originally before I realized that Linda recommended no beans during P3. Although I did eat them that way in my first P3 and didn't have a problem.

Yep, was going to try this today, and I couldn't find my cream cheese... I may have a cream cheese stealing husband... ;) Or, its in the freezer downstairs... LOL!! Maybe tomorrow!! :D

Just remember this is very high in fat and that you want just a little.
