Green Salsa
2 lbs of green tomatillos
20 red peppers ( Japanese peppers) without the tail
1 or 2 garlic cloves
1/2 -1 tsp of sea salt
Boil green tomatoes for about 10 min (save the boiled water)
toast the peppers on pan or grill- keep turning them for about 2 min- make sure they are toasty and not burned
Blend the green tomatoes, red peppers, garlic, salt and about 2 cups from the boiled water - you can add more water or lessen the water depending on how thick you want your salsa.
Use the salsa on chicken, steak, pork chops, eggs--whatever - very tasty. Enjoy
