Coconut Meringues

4 Egg Whites
teaspoon Cream of Tartar
1 Cup of Stevia in and Raw
1 teaspoon Coconut extract

Preheat oven to 225. Cover 2 large baking sheets with aluminum foil and do not grease. Place egg whites and cream of tartar in lrg bowl, beat with mixer at medium speed until soft peaks form. Increase speed to high and gradually add splenda until stiff peaks form. Add coconut extract. Drop mounds onto baking sheets. Bake for 1 hrs. Turn oven off and cool meringues in closed oven for 2 hours or until dry. Carefully remove from foil.
