Thin Faux Pancakes

6 eggs
1/4 cup milk
1/2 stick of melted butter
salt to taste

Optional additions:
splash of vanilla
1/4 tsp cinnamon
1 tsp sweetener

Blend all. Let settle for a few minutes. Warm pan to 7-8 (medium high). Put a little butter down and begin making thin pancakes. It's sort of an art depending on how thin you want them. I pick the pan up and drizzle the batter and turn till it covers the surface. It doesn't take long to cook, then I put the spatula under a corner and work it around to be able to flip.

As for the optional ingredients, it just makes them sweeter if you want to put peanut butter on them. If you make them without the sweet, they are great to put chicken and cheese and whatever else you want. So great and wonderful even after a few days of refrigeration.
