Po' Cakes

2 eggs
7 Tbsp. almond flour
Pinch of salt

Heat skillet with oil.
Drop by large spoonfuls and smooth out a bit (I made four with the batch). Cook on each side about 1-2 minutes until brown and a bit crunchy. Top with cream cheese or sugar free preserves of your choice. These are like crepes.

Variation of Po' Cakes

2 eggs
1/3 cup +/- almond meal (I have a scoop from an old drink mix in the jar of almond meal so that was the amount)
splash of milk
pinch of salt
Liquid Stevia to taste

Preheat skillet with a little coconut oil, mix everything and dump in all in the skillet as soon as its combined, donít let it stand. I tilted and pushed like making an omelet till it set up some then split it into 4 sections and flipped each piece and cooked till completely done. I topped it with cream cheese and SF cherry preserves. MY OH MY! It was lighter than a pancake, heavier than scrambled eggs and very filling! Sorry I donít measure much. Itís all done by sight & instinct.
